Kitchen Tips-

Raw honey has antiseptic properties (it never goes bad!) and can therefore soothe a sore throat. It can also alleviate pollen allergy symptoms if it's derived from local pollen AND buying it supports local pollinating and their beekeepers. We need bees, so keep some local raw honey on your shelf (but never give it to a child under one year old.)

 Collapsing Health Care System-- it's actually a good thing!

No one is happy with their current health care benefits. According to a recent article in AARP magazine, we in the US are now spending about $8000 per person per year and we’re getting crappy results for that exorbitant investment. Our hospitals are suffering, our doctors aren’t happy and patients are fearful and stressed-out and over medicated. The universal health care models in Europe are spending approximately half that much and are getting better results. A recent study revealed that three decades ago, 7% of American corporate profits went towards health care costs and now the average is 50%! It’s amazing that anyone is attached to the status quo, but we need only see who is struggling against of health-care reform to know who is making money off the pain. There are powerful entities in this country who are invested in keeping people passive, unwell and prescribed-to.

Here’s the good news: the combination of a financial crisis and a health care crisis is a window of opportunity. There is movability, motivation and consensus that we need change, and so it is finally, finally actually happening.

Food Lifestyle Group starts tomorrow- Don't Miss Your Chance!
A morning group is scheduled to begin TOMORROW at the PenBay YMCA on Wednesday, April 29th from 9:30 to 11am. Learn why my groups can help you. This group will meet and continue in this time slot every other Wednesday (4/29, 5/13, 5/27, 6/10, 6/24, 7/8)  for three months through the summer. Members of the YMCA can take advantage of Prime Time Childcare to attend this program. Contact the YMCA to register. 236-3375

It's only $225 for Y members, which can be paid $75 monthly!

Money Saving tips--
Fiddlehead season is almost upon us. It's a reminder that what's local and old-fashioned is also nutrient-dense, cost-effective and environmentally friendly. Fiddleheads, shore greens wild berries, wild mushrooms (if you know what you're doing) and wild game are all free, local and extremely healthy. Fewer food miles, better nutrition and free. What more could we ask for?

Awesome Coconut Granola---

3 lbs of thick rolled oats (can add or substitute other grains like barley, rye or spelt flakes)
2/3 cup melted unrefined extra virgin coconut oil
1/4 cup (or to taste) Agave nectar
1/8 cup unsulphured molasses
1 cup raw almonds
1 cup raw sunflower seeds
1 cup shredded coconut
1 cup raisins
pinch whole salt (optional-- didn't add it to yours)

Chop Almonds and mix together with oats in a large roasting pan. Add seeds and shredded coconut but NOT raisins. mix together and then add the sweeteners and warmed (liquid) coconut oil and stir vigorously til ingredients are evenly coated. Bake at 350˚F for one hour, stirring once or twice during the hour. Remove from oven and let cool. Add raisins while granola is still fairly warm. Store in glass, airtight container. Enjoy with nutmilks or whatever milk you prefer, or sprinkle on yogurt.

Eating For Energy--

This workshop explores what could be holding you back food-wise from
sleeping hard, waking up easily and having even energy all day. There is
information about food allergies and what actually happens during food
processing and a larger look at food trends in the world. Participants will
have an opportunity to explore the emotional power of food, comfort food,
emotional eating and will leave with a new understanding on how to make
lifestyle change actually stick. We’ll also explore super foods and discuss
how to work them into a busy life.

Nutrition for a Healthy Heart
- Self-Nourishment from Your Food and Your Life
Let’s look at our health in the larger context: Why are some parts of the world “hot spots” for heart disease while other places are “cold spots?” Did our ancestors struggle with diseases such as heart disease? If not, why not? We’ll explore various strategies for heart health here and around the world and discuss why diets don’t work and how make lifestyle changes permanent. We’ll also explore how other forms of nourishment besides food contribute to long and healthy lives.

Sugar Blues

The presentation focuses on sugar in our modern diet, what forms it takes
and how long it has been there. Does that fudge recipe from your
great-grandmother make fudge an ancestral food? The discussion examines how
sugar affects you, your energy and your moods. Is it addictive? Are
artificial sweeteners a safe alternative? Learn about which sweeteners to
avoid and which ones to try. Looks across cultures and back into history to
put our sugar habits into historical context. This workshop encourages
lively discussion and questions from participants.

The Context of our Food Series
A powerful mini-course with two popular workshops back to back in one day with a lunch break in between:

1) The Ancestral Food Workshop

This is a nutrition workshop that illuminates our current food trends by
placing them in historical context. It has been said that our food has
changed more in the last 30 years than in the previous 30,000 years.
In what ways has it changed? Are our bodies having a hard time
keeping up? What were the traditional foods passed down in your family and
how far back does the tradition go? Has the recent globalization of our food
supply affected your family? This workshop introduces some ancestral food
recipes and tells you where to get the ingredients locally.

2) The World Food Workshop

This is a nutrition workshop that illuminates our current food trends by
placing them in international context. Take a peek inside the kitchens of
families in ten foreign countries with a powerpoint slideshow to see what
they eat and what it looks like. These families and their countries are in
various stages of “modernization.” How much food comes in packages? How much
is refined or imported vs. fresh and local? How much meat do they eat? How
much sugar? What oil do they use for cooking? Do a little armchair traveling
around the world to explore our world’s foodscape, and then bring it home to
your kitchen. This workshop introduces some exotic food recipes and tells
you where to get the ingredients locally.
