Collapsing Health Care System-- it's actually a good thing!
No one is happy with their current health care benefits. According to a recent article in AARP magazine, we in the US are now spending about $8000 per person per year and we’re getting crappy results for that exorbitant investment. Our hospitals are suffering, our doctors aren’t happy and patients are fearful and stressed-out and over medicated. The universal health care models in Europe are spending approximately half that much and are getting better results. A recent study revealed that three decades ago, 7% of American corporate profits went towards health care costs and now the average is 50%! It’s amazing that anyone is attached to the status quo, but we need only see who is struggling against of health-care reform to know who is making money off the pain. There are powerful entities in this country who are invested in keeping people passive, unwell and prescribed-to.
Here’s the good news: the combination of a financial crisis and a health care crisis is a window of opportunity. There is movability, motivation and consensus that we need change, and so it is finally, finally actually happening.

I feel strongly that change needs to start right here, right now, with me. And you. The system will change when we private citizens push it to the tipping point with our personal choices. Food Lifestyle Group starts tomorrow- Don't Miss Your Chance!
A morning group is scheduled to begin TOMORROW at the PenBay YMCA on Wednesday, April 29th from 9:30 to 11am. Learn why my groups can help you. This group will meet and continue in this time slot every other Wednesday (4/29, 5/13, 5/27, 6/10, 6/24, 7/8) for three months through the summer. Money Saving tips-- Fiddlehead season is almost upon us. It's a reminder that what's local and old-fashioned is also nutrient-dense, cost-effective and environmentally friendly. Fiddleheads, shore greens wild berries, wild mushrooms (if you know what you're doing) and wild game are all free, local and extremely healthy. Fewer food miles, better nutrition and free. What more could we ask for?

Awesome Coconut Granola---
3 lbs of thick rolled oats (can add or substitute other grains like barley, rye or spelt flakes)
2/3 cup melted unrefined extra virgin coconut oil
1/4 cup (or to taste) Agave nectar
1/8 cup unsulphured molasses
1 cup raw almonds
1 cup raw sunflower seeds
1 cup shredded coconut
1 cup raisins
pinch whole salt (optional-- didn't add it to yours)
Chop Almonds and mix together with oats in a large roasting pan. Add seeds and shredded coconut but NOT raisins. mix together and then add the sweeteners and warmed (liquid) coconut oil and stir vigorously til ingredients are evenly coated. Bake at 350˚F for one hour, stirring once or twice during the hour. Remove from oven and let cool. Add raisins while granola is still fairly warm. Store in glass, airtight container. Enjoy with nutmilks or whatever milk you prefer, or sprinkle on yogurt.
